Ingredients
12 oz Bacon
1-pint cherry tomatoes
1 1/2 cups Corn, raw or sautéed
1/2 Red onion, medium
2 cups Romaine lettuce
1 batch of Jalapeno cashew cream dressing (see Directions below)
10oz of your choice of pasta noodles. preferred bowtie noodles
1 Slightly ripe but still firm avocado, diced
3/4 cup raw cashews: Raw cashews – When soaked and blended with a bit of water or milk they create a super creamy & nutritious cashew sauce. You’ll need to soak them for at least 2 hours, but I’ve also added a way to speed up the process to only 20-30 minutes in the instructions of this recipe.
Lemon juice: this helps to brighten the sauce up. Make sure to use freshly squeezed lemon juice.
2 tbsp Cannabis Infused Olive Oil
1 cup fresh Cilantro
3/4 tsp Spices: Onion powder, salt & pepper.
Instructions
Chop all your veggies and have them ready to go. You can also cook your bacon over medium heat, cook bacon on both sides until crispy and golden brown, and Chop Bacon into pieces.
Next cook your pasta until al dente, drain and then place in a large bowl.
Add all of the jalapeno cashew dressing, then stir together to combine.
Add the chopped ingredients. Gently toss again, then taste and adjust seasonings as necessary, adding more salt and pepper if you’d like.
Extra Toppings such as grilled chicken, chickpeas, croutons, shredded cheese, and drizzle Cannabis Infused Olive Oil on top.
Jalapeno Cashew Cream Dressing Instructions:
First, soak the cashews in 2 cups of warm water for at least 2 hours; you can easily speed up the process by adding the raw cashews to a pot with water and placing it over high heat. Bring water to a boil, then immediately turn off the heat; let the cashews sit for about 30 minutes in the hot water, then drain.
Drain the cashews, reserve the soaking water, and transfer the nuts to a blender or food processor. Blend until smooth and silky, about 2 minutes.
Add the cilantro, Cannabis-Infused olive oil, jalapeno, lime zest, and juice and blend until smooth. The mixture should be slightly thick, but pourable. If the mixture is too thick, add 1-2 tablespoons of reserved water from soaking the cashews. Makes roughly 1 cup of sauce. Season with salt and pepper.
